Ingredients

  • 3 1/2 pounds sweet potatoes
  • 2 teaspoons butter
  • 1 cup chicken stock
  • Salt and pepper
  • 2 teaspoons ground cinnamon
  • 2 large bananas, thinly sliced on an angle
  • 1/4 cup dark brown sugar

Directions

Preheat oven to 350 degrees F.

Place sweet potatoes on a baking sheet and roast until tender, about 1 hour. Remove from heat and let cool until cool enough to handle. (Keep oven at 350 degrees F). Peel and mash sweet potatoes in a bowl until smooth. Stir in the butter, stock, salt, pepper, and cinnamon. Transfer to a casserole dish. Cover the surface of the potatoes with the banana slices by laying them on top, slightly overlapping in concentric circles. Sprinkle the brown sugar evenly over the top. Bake for 20 minutes or until the top is browned.

    I too am not a sweet potato lover, especially not topped with marshmallows but this recipe was very tasty...the bananas... really give it another dimension and it went very well with the turkey. My potatoes took 1hour and 15 mins to get soft. After mashing and topping with bananas and sugar, I put it under the broiler for a faster caramelisation.Read more

    I read all the reviews before making this dish and am really glad. I also used less liquid (about half) and only 1 t.... cinnamon. I also used vegetable stock instead of chicken. I used more brown sugar on top and also added mini marshmallows - the potato mixture itself wasn't that sweet so I wanted the top to be extra sweet. I was thrilled to say EVERYONE loved it and I'm happy I decided to try it.Read more

    This is a good recipe. I would use less stock, it made the casserole a bit soupy and I would put it under the broiler to... crips up the bananas. Everyone that had some loved it - Even ones who don't like sweet potatoes! VERY Good it just needs some tweeking!Read more

    The flavor was good but the presentation was pretty bad. The bananas on top looked like old sliced bananas and didn't... caramelized at all. The sugar melted and disappeared. I think putting them under the broiler would work for a better presentation.Read more
