Quinoa, Chicken, and Red Lentil Stew

Ingredients

  • 1 1/2 tablespoons olive oil
  • 2 cups finely diced red onion
  • 1 bell pepper, diced
  • 1/2 cup sliced celery
  • 1 cup quinoa
  • 1 tablespoon chopped fresh oregano leaves
  • 2 tablespoons chopped fresh thyme leaves
  • 3 cloves garlic, crushed
  • 3 boneless, skinless chicken breast halves (about 6 ounces each), cut into bite-size pieces
  • 1/3 cup red lentils
  • 4 (14-ounce) cans chicken broth

Directions

In a heavy-bottomed stockpot, heat oil over medium heat. Add onion, bell pepper, and celery and saute for 2 minutes. Add quinoa, oregano, and thyme and saute for 4 minutes. Add garlic and chicken and saute for another 4 to 5 minutes, or until chicken is fully cooked. Stir in lentils and cover with chicken broth. Bring to a gentle boil and then reduce heat and simmer for 40 minutes, or until both lentils and quinoa are tender.

    As many others have said, this stew is bland. Tasty, but bland. I added a large can of chopped green chilies (a roasted... poblano pepper or two would work as well) and 1/4 cup of salsa verde. (fairly spicy with green chili and tomatillo). Add more or less of the salsa depending on how hot you like your food. The flavor is much improved. I also let the stew sit covered off the stove for 15 minutes or so after cooking it, so the quinoa absorbed the broth and fluffed up nicely.Read more

    Wonderful recipe, needs more seasoning.

    With this recipe, i found it very under-seasoned. I needed to add about 1-1 1/2 tsp extra salt and I also added a little... Italian seasoning. As a suggestion to make it a little easier, I shredded a rotisserie chicken from the grocery store and added it toward the end, just to warm it through. Read more

    I made this w/ chicken thighs as I had to breasts in the house. I would add more lentils next time and maybe some carrots... just to pump up the color. Other than that, a keeper. I definitely like quinoa! Read more

    One thing I noticed was the red lentils loose there color. So everything has a transparent look. Visually the stew does not... impress me. The redonion turns clear and the pepper are to soft when it is all done. I will get back to the review after we eat it. Read more

    If you cook this stew as laid out, it will be really salty. I suggest using low-sodium broth or maybe substituting water for... 1/2 of the liquid. If you add as much broth as stated, the quinoa turns to mush before the lentils are cooked.Read more
