Ingredients

  • 6 plum tomatoes, diced
  • 1 green bell pepper, diced
  • 8 green onions, sliced
  • 1 cup peeled and diced cucumber
  • 2 hard-boiled eggs, whites only, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fresh cilantro leaves, chopped
  • 2 tablespoons fresh parsley leaves, chopped
  • 1 teaspoon salt
  • 3/4-pound ready-to-eat shrimp, chopped
  • 1 head butter lettuce, leaves separated and cleaned

Directions

Combine tomatoes, bell pepper, green onions, cucumber, and hard-boiled egg whites in a large bowl; set aside. In a separate bowl, whisk together garlic, olive oil, vinegar, cilantro, parsley, and salt. Add garlic mixture to tomato mixture. Add shrimp and toss to combine. Serve over butter lettuce leaves.
