Ingredients

  • 3 lemons, juiced
  • 1/8 cup tequila
  • 1/2 tablespoon red chili pepper flakes
  • 1 teaspoon chili powder
  • 4 cloves garlic, crushed
  • 2/3 pound flank steak
  • 2 teaspoons canola oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1/2 red onion, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 (6-inch) corn tortillas, warmed
  • 1 cup chopped fresh cilantro leaves

Directions

Mix the lemon juice, tequila, pepper flakes, chili powder, and garlic in a medium-sized plastic container. Place the steak in the container, cover, and marinate in the refrigerator for at least 45 minutes.

Heat canola oil in a large nonstick saute pan over medium heat. Add bell peppers and onion and saute until crisp tender. Remove from pan, set aside, and keep warm. Remove steak from marinade and discard marinade. Saute steak in the saute pan for about 5 minutes on each side or until cooked through. Remove steak from the pan and slice into thin strips. Return steak strips, bell peppers, and onion to pan and warm through for about 1 minute. Season with salt and pepper, to taste. Divide steak mixture evenly among the warmed tortillas. Garnish each with 1/4 cup cilantro and serve.

    These were a hit with the family. The only changes I made were: I had no tequila, so I just omitted it, and I doubled the... recipe for my family of 6. (And trust me, there were no leftovers.) We used a shoulder steak, and the marinade made it nice and tender. I always follow recipes as closely as I can the first time I make them, but if I make these again I'll add more hot stuff ... we like it spicy. Also, I noticed that by the time I finished cooking the meat, the peppers and onions were somewhat limp, and the meat didn't have time to rest. I think I'll grill the steak first and give it time to rest while I saute the peppers and onions -- or maybe even saute the onions and peppers in one pan, and grill the steak on the outdoor grill. Very nice recipe. It will go into my list of favorites.Read more

    This was awesome! We even made a few subsitutions...Southern Comfort for tequila & montreal steak seasoning for the red... pepper flakes. We also used lemons & limes instead of just limes. We will definitely make this again.Read more

    these fajitas were as close to the real deal I usually get in the restaurants. instead of using tequila(cuz I hate it), I... marinated with my uncle Jager. some people might not like it this way but it could go both ways. I also think the marinade could have used more herbs and spices to better enhance the taste.Read more
