Ingredients

  • 1 large portobello mushroom
  • 1 small Italian eggplant
  • 1/2 pound lean ground turkey breast, no skin added
  • 1/2 pound ground sirloin
  • 1 (4-ounce) can tomato paste
  • 2 teaspoon dried oregano
  • 2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon crushed black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon paprika
  • 1/4 red onion, chopped fine
  • 2 cloves garlic, crushed
  • 1 medium egg

Directions

Preheat 350 degrees F.

Using a food processor with the grinder attachment, grind the mushroom and eggplant together. In a large bowl, combine the mushroom mixture with the turkey, sirloin, tomato paste, oregano, basil, salt, pepper, Worcestershire sauce, paprika, red onion, garlic and egg until completely blended. Be careful not to over blend.

Spray a nonstick loaf pan once with canola oil cooking spray. Using clean hands, pat the turkey mixture into the pan.

Bake for 45 minutes or until internal temperature reaches 160 degrees F.

    Awful

Rated: 1 stars out of 5
I made this meatloaf yesterday for dinner, and both my husband and I couldn't eat it! Was so too strong tasting, even after... we doused it with a lot of ketchup. I will definitly stick to my mom's meatloaf recipe.Read more

    Loved the fresh taste

I didn't think substituting veggies for bread and cheese would work - But I was completely surprized at the flavor and... moistness of this meatloaf. And it's really great cold the next day too.Read more

    It was very good!!!!!!!!!

Rated: 5 stars out of 5
I made it last night, and doubled the recipe. I used one large portabello mushroom, and one small Japanese eggplant for two... pounds of dark ground turkey. I left out the tomato paste. It was moist, and in fact the best meatloaf that I've had in a long time. It didn't fall apart. My husband and friend loved it. "Rock On" Carlos!!! This is a keeper.Read more

    We threw this one out

Rated: 1 stars out of 5
I followed the instructions faithfully although the eggplant may have been larger than what was intended. (Still, I used the... smallest one I could find in the bin.) The loaf was far too mushy and didn't hold together at all. It didn't taste that good either and as much as my husband and I hate to waste food, the remainder of this went into the garbage. If it had at least tasted better than it did, I would have tried again with some adjustments to see if I could get a better texture.Read more

Too much work, and it didn't even taste good!

Rated: 1 stars out of 5
I saw the TV episode and thought this looked like a smart way to cut calories. It was a lot of work and called for many... ingredients that I wouldn't normally have on hand. The outcome? Yuck!Read more
