Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 11/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 5 tablespoons butter
  • 1/4 cup buttermilk
  • 1 teaspoon lemon juice
  • 5 large bananas
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 cup pecan or walnut halves

Directions

Preheat oven to 350 degrees F. Grease and flour a 9 1/2 by 5 1/2-inch loaf pan.

In a large mixing bowl, sift flour, whole-wheat flour, baking powder, and baking soda. Reserve.

In the bowl of an electric mixer, food processor, or blender, add eggs, butter, buttermilk, lemon juice, bananas, sugar, and salt.

Mix or blend until smooth. Slowly add dry ingredients. Fold in nuts. Pour batter into pan and bake 1 hour and 25 minutes or until toothpick inserted comes out clean.

    The first time I made this it tasted like something was missing. The next time I made this I added some vanilla and a little... nutmeg. It turned out fantastic. I split up the batter into 4 mini loaf pans to cut down on baking time. The bread turned out very moist. Read more

    Love this recipe! Added 1 tsp vanilla, an extra banana and subbed a half bag of butterscotch chips for the nuts (son's... allergic). Cooked in 5 mini loaf pans for about 40 minutes and they came out absolutely fantastic.Read more

    I really picked this bread because of the whole weat flour and 5 bananas, and was a little worried since there were so many... others with 5 stars (this one only had 4). I'm so glad I chose this one! It was fantastic. I've never made banana bread before and I'm so impressed it turned out so well. I took some of the other suggestions and added another 1/4 cup sugar and split the batch into two loaves. I'd recommend doing that to get a nice moist bread with a light brown crust. Read more

    Yummiest healthy banana nut bread!

    We first made this when we had too many bananas sitting around, about a year ago. I wasn't optimistic but chose the healthier... recipe for the sake of my jeans :) it turned out surprisingly delicious and moist, and was devoured by my roommates in 24 hours. My trick to better consistency of the bread is to do 5 mini loaves instead of a large loaf, spraying and flouring each little disposable aluminum pan. You have to shorten the bake time, but i can't remember by how much exactly. just keep an eye on it and check it for done-ness with a toothpick, but they end up more moist and evenly cooked with less burning on the top. i'm going to try them as muffins next. bag of bananas in the kitchen right now.Read more
