Crunchy Granola

Ingredients

  • 1 1/2 cup brown sugar
  • 1/2 cup water
  • 4 teaspoons pure vanilla extract
  • 1 teaspoon salt
  • 8 cups rolled oats
  • 2 cup chopped pecans or walnuts, or slivered almonds

Directions

Preheat oven to 275 degrees F.

Line 2 cookie sheets with parchment paper and reserve.

Combine brown sugar and water in a 4-cup microwave proof glass measuring cup or bowl. Place in microwave on high for 5 minutes and cook until sugar is completely dissolved. Remove from microwave, add vanilla extract and salt.

In a large mixing bowl, combine oats, nuts, and brown sugar syrup mixture. Stir until thoroughly mixed. Spread the granola onto cookie sheets and bake 45 minutes to 1 hour or until golden and crunchy.

When the mixture comes out of the oven, it is still very pliable. You may choose to add in dried fruit as a finishing touch at this time. When granola has cooled completely, store in an airtight container.

    I just found this recipe when I couldn't find a really good "crunchy" granola in my local stores, and so I thought I'd give... it a try. After all, it had so many wonderful reviews, how could all of you be wrong... I might mention that this was my first attempt at making granola, and I couldn't have been more pleased with how quickly and easily it was to make. It is, by far, the BEST granola I've ever had, and my hubby absolutely loves it (he doesn't usually like any kind of granola)! It's definitely a keeper in our house! I made a few modifications to the recipe, and then calculated the nutritional value because we're both watching our weight. For the individual who was asking about grams of sugar, that's included in carbs. My modifications were that I used 2 cups of Spenda Brown Sugar Blend instead of the regular brown sugar, 2 cups of Kellogg's Bran Buds instead of the wheat germ or flax seed because the Bran Buds are already crunchy little morsels that provide lots of fiber (and taste great), 1 cup of chopped pecans (in order to keep the fat and calorie content to a minimum), and finally I added about 1 1/2 cups dried cranberries (Craisins) for a little fruit flavour.     I have been making this granola for years now and the whole family just loves it, even my teenagers. This recipe is so... versitile you can use different nuts and dried fruits based on your taste at that time, or based on what you have in the pantry. Sometimes I add flax, when we need a little more fiber. It is great on yogurt, with skim milk or just plain. I have several recipes that are family favorites from the Cooking Thin show. Try the pizza crust recipe, if you ever get a chance...it is worth the time to make it and it freezes so well...great for the other Food Network recipes that call for frozen pizza dough, thawed.     This is such an easy recipe and it turns out so great! I love it as a snack or to add to yogurt. I did try experimenting by... replacing the brown sugar with Splenda brown sugar and it still turned out very well.Read more

    I have searched for a good granola recipe and I have finally found it. I prefer simple oat granola with nuts and fruits. This... recipe is easy to adjust to your personal tastes. I have made it with different nuts, dried fruits, and coconut. My favorite way to eat this is over yogurt. My 3 daughters like it this way also. It makes a great healthy snack.Read more
