Ingredients

  • 5 ounces rice noodles
  • 1/2 cup lime juice
  • 1/4 cup sugar
  • 2 tablespoons fish sauce
  • 1/2 teaspoon chili paste
  • 1 pound small shrimp, peeled and deveined
  • 1/2 cup loosely packed cilantro leaves

Directions

Prepare rice noodles according to package instructions.

Combine the lime juice, sugar, fish sauce and chili paste to make the Thai shrimp sauce. Pour Thai shrimp sauce into a 10-inch non-stick pan. Turn heat to medium high and bring to a boil. Add the shrimp, and reduce heat to medium low. Cook until shrimp is tender, about 3 to 4 minutes. Add cilantro to sauce. Taste and adjust seasonings, pour over noodles.

    Delicious though I didn't add as much lime, I find citrus really tends to overpower many dishes. We also added cashews and greens. So quick and easy, this is a keeper!

    So easy! I have made this recipe many times and it is always wonderful. I've used rice linguine, angel hair pasta and rice sticks. It is the best in my opinion when I use Rose's Lime Juice! I then don't add the sugar or very little.

    Loved it! Since I am on a diet, I reduced the sugar to 1 tablespoon. The sauce is really good (it didn't suffer a bit by the reduction of sugar, next time I want it a bit hotter so I'll increase the Thai chili to 1 teaspoon. This is a very figure friendly recipe!!
