    excellent soup!! i doubled it for our fam of 5 and everyone loved it!!! i did add a little red pepper like suggested. such a deliciously simple soup, yet nutritious. people would never guess i put 2 whole bags of baby spinach in there. i love the fact that this is such a versatile recipe... i'm sure chicken would taste awesome in it!

    Yummy. I added carrots, lima beans, a splash of balsamic vinegar, some red pepper flakes, and I used a can of crushed tomatoes as well as some roasted cherry tomatoes. I also flavored it a bit more with some basil, oregano and pinch of sage. Topped it with some grated romano cheese! So easy and good.

    Delicious! Followed the recipe with a few additions - added a can of cannelloni beans, drained and rinsed, and some cut up and sauteed chicken sausage. Really yummy, fast, and flavorful!

    Please don't pass up this recipe because it seems too basic and may lack in flavor. This soup is very simple, yes, but it's also surprisingly good! It's especially good the second day when all of the flavors have had a chance to meld together. I did add some red chili pepper flakes as recommended by other reviewers. Also, I added a teaspoon or two of concentrated chicken stock paste for added flavor and richness and topped it with a little freshly grated parmesan cheese. This is super easy, delicious and perfect for a cold winter night!

    I made this tonight for a friend that just got out of the hospital. Of course I had to taste it. Wow, it was delicious. I added some croutons and they added the crunch. I will make this again. I hope my friend enjoys it too.

    I love that it is so easy and FAST! I sprinkled a little red pepper flake and dried oregano for flavor. Perfect. Great for weeknights or make-ahead and freeze. Yum!

    I add a good spoonful of pesto and some balsamic vinegar. I also put a handful of fresh spinach on the bottom of each bowl - I don't cook it in the soup - that way the hot soup wilts it when you serve it. It stays so much more fresh that way!
