I made this last night and although I was skeptical at first I was definatly delightfully surprised. I think this will probably become one of our frequently eaten summer salads its light and refreshing yet full of protein not to mention super easy to make. Only drawback was it is not so great at a leftover it gets mushy and the flavors all blend together so I recommend only making what your going to finish.

I have been watching your show for a while now and just started trying to make these recipes. Well let me tell you that this bean salad is not excellent tasting but very easy to make.

This is a great salad, especially for a light spring or summer lunch. My boyfriend and I both love it. Doesn't do well left over, though. I like to serve it with a salad of basic greens with a basic balsamic vinaigrette. For a slightly different flavor, substitute red onion for green onions and/or balsamic vinegar for lemon juice. I think the original is the best.
