Previous brushes with buffalo always left that game-y taste. I tried this recipe when a change in diet called for leaner meats, of which buffalo qualified and my husband recalled liking buffalo a lot. I did adapt the recipe a bit, but only to cut the overall servings in half and eliminate the green chiles, as these were just a bit spicy for my young child. Done on the grill (indoor or outdoor to perfection, these burgers (or meatballs have great flavor!
