Ingredients
- 6 cups flour
- 1/2 teaspoon baking powder
- 6 eggs
- 3 cups sugar
- 1/2 pound butter, at room temperature
- 1/2 cup vegetable shortening, at room temperature
- 1 1/2 tablespoons lemon extract
- 1 1/2 teaspoons ground nutmeg
- 1/2 cup water
Directions
Preheat oven to 300 degrees F.
In a large mixing bowl, combine flour, baking powder, eggs, sugar, butter, shortening, lemon extract, nutmeg and water. On a floured surface, roll out the dough to 1/2-inch thickness. Cut with a 2 1/2-inch circle biscuit cutter.
Place on a greased baking sheet. Bake in oven for 15 to 25 minutes, or until slightly golden on the edges. Serve.

Just attempted to make these. Followed directions closely...double-checked measurements. i wound up with a dough that was MUCH too soft to handle. Dealt with it...and was able to make about 3/4 of the recipe. put the remainder of the dough into the frig for about half an hour. It was much easier to handle. Cookies we sort of bland as well. I am sorry...but I wouldn't recommend this recipe to anyone.

The tea cake recipe was a great success with my family. I followed the recipe directly from the site and came out with a perfect result. In my language "They were off the chain"!!!

While looking for a teacake recipe reminisent of my great aunt's, this recipe out amoung the others because it had nutmeg, which is the key ingredient in all the really good teacakes that I remember as a child. Therefore, I used this recipe subsituted the lemon extract for vanilla and turning the temp to 350, cooked the first batch at 300 and it seemed to low. They were great and were a hit with my family for Christmas, I believe my aunt would be proud.
