    Okay, this is only for the cupcake, not for the frosting. I used cream cheese frosting with a little lime juice in it.

    I LOVE this recipe! For once, a coconut cake actually has enough coconut in it to make me happy, and the buttermilk created a beautiful rise- it's a nicely shaped cupcake, but still moist and dense. This is going in my steady rotation.

    Nice cupcake. My husband doesn't care for coconut (except in Ranger Cookies so I put it in a food processor and minced it pretty good-and he didn't mind it at all. I like coconut but I didn't want big pieces of it. Having said that I would possibly reduce the amount of it next time since I would like the lime flavor to stand out more. I made mini cupcakes and had way too much frosting left-but just means an excuse to make some more-Yum.

    After reading the reviews, i decided to leave in the coconut flakes...now i wish i hadn't. The lime flavor in the cake was enough and when paired with the tangy frosting it was delicious. The flakes were overpowering and i got a chunk of coconut in every bite. It kind of ruined the cupcake for me, even though the rest of it was amazing. So if i were going to make this cupcake again, i would definitely remove the coconut.

    I love this recipe and everytime I make it's a hit! I did have to tweak here and there but it is one of my favorite cupcake recipes!

    These cupcakes were fantastic!! My husband didn't really care for them, but everyone else did! So moist and full of flavor.I'm about to go make some right now for my sister-in-law who called and requested some for Memorial day. Probably the only thing I changed was the frosting. It didn't taste like anything special so I added cream cheese to it and presto, that set it off!

    Not a fan-dense hockey pucks! The cooking time is way less than it says. I cooked them for 15 minutes and they were dry and dense and no key lime flavor.

    I used fresh key lime juice, but the key lime flavor wasn't obvious, all I can get from the cupcake is coconut flavor.
    After reading the reviews, I cut down the amount of sugar in the frosting, but that made the frosting not firm enough yet still too sweet.

    Fantastic, easy, and a major hit at work! I added toasted coconut for my garnish. I will definitely make again.
    Note - the frosting can get REALLY sweet; I didn't add all of the powdered sugar and am glad that I only added about 3/4 of what the recipe called for.

    I have made these twice and each time I got tons of compliments. So much more flavorful than a more traditional cupcake!
