    I made a profit with mine. I didn't want to part with them. my taste buds literally died of the ever-lasting flavor!!! I added a nice lemon cream cheese filling and frosting:
    ingredients
    3/4 cup cream cheese (6 oz.
    1/4 cup sugar
    1 tbsp. lemon juice
    2 tsp lemon zest
    Enjoy!!!

    So good! Followed the recipe exactly, does make more than 16, I made 20, and needed more lemon curd than called for. Also, it takes a bit longer than 20 minutes to prepare, maybe about 30-35, but is definitely worth it. I really liked that no frosting was necessary, you just eat and serve right out of the oven!

    Someone at a work event requested lemon cupcakes. Since I don't like them, I Googled a recipe and wound up on this one. People now request "the lemon cupcakes" for EVERY event I go to. I don't even like lemon cupcakes and I think these are amazing! P.S. Make fresh lemon curd -- quick and super-yummy (I used Joy of Cooking.

    I have made these cupcakes several times and everyone always asks for the recipe. Now whenever I am to bring something to an event, people ask me to bring the sunshine cupcakes. Love, love, love this recipe!!!!

    Such an easy recipe. I used regular sized cupcake pans. I had enough batter for 19 cupcakes, plus a bit of batter to cover my attempt at filling the cupcakes with lemon curd.

    Everyone loved these and I had lots of people asking for the recipe.

    I love, love, love these. Very Yummy. I used regular cupcake pans and made 24. I put a very small amount of cream cheese frosting on top so the crumbs would stick. and i used Kebler shortbread cookies instead. worked out great!!

    If you love lemon and shortbread, then these cupcakes are for you! What a delicious combinatation. I would recommend using Walker shortbread cookies. I found the Lorna Dooone shortbread cookies a little too bland.
