I made a big batch of this recipe last Friday for Stations of the Cross at our church. The soup was delicious, and I loved the taste of ginger. All my soup was gone, and I got a lot of compliments. Thank you very much.

A very good lentil soup. Reducing the lentils makes it more soup-y. Also try adding a 1/4 tsp of cumin and lots of black pepper so add a little zing

This recipe brought out the best favor in the lentils. So often Lentil Soup lacks favor, but the ginger and garlic give the beans a well rounded favor. I added some diced carrots and potatoes to the soup.

The recipe instructed that I cook the soup uncovered for over an hour.
I just don't understand how I'm to expect a refreshing, great tasting, moist soup if it has been cooking for so long without a lid to keep in the moisture. By the time it was finished cooking, the chicken stock had evaporated, the lentils were a little crunchy, and there was hardly any moisture left in the pot.
Other than that, the taste was good. The ginger added a nice, kind of foreign hint that I haven't tasted in other lentil soups I've tried.

This soup really needs more spices and flavorings. As a base it is nice, but bland unless you add more spice.
