This soup is wonderful! I make a lot of soup, and my husband said he could "eat this soup everyday"..his absolute favorite. It makes a huge batch so next time I think I'll halve it. All 3 quarts of broth didn't even fit in my dutch oven, so I think I only used about 1.5 quarts, but I like the thicker consistency. Fresh thyme really amps up the flavor. For some heat, I also added a bit of hot sauce.

Absolutely loved this soup, and so did my family! Worth the time to make a fresh, homemade soup vs. buying a can...no comparison!! I followed the recipe exactly expect my local store didn't have french green lentils so I used plain brown lentils.

Delicious, delicious, delicious! I left the leeks out and only used 2 onions and it was fine...and as some have mentioned, more than enough to freeze the leftovers for another meal or two!

Feeling under the weather, I wanted to make a really hearty soup [despite the 80 degree weather!]. I made this soup because I had everything except for leeks and and the french lentils on hand. I halved the recipe, used some spring onions for the leeks, regular lentils for the french lentils, but kept everything else the same. It was so good! Definitely what I was looking for. I don't know if I messed something up during the halving of the recipe but I would add more stock if you're using regular lentils. Also - the red wine vinegar was an excellent addition but only if you like vinegar - I thought it was wonderful but my not-a-fan-of-vinegar husband didn't care for it.
Will definitely be making this again!

BEST VEG SOUP I EVER MADE!!!
My family LOVES this soup. Made it today for the first time, and everyone said "This is the best vegetable soup I've ever had." And this crowd isn't easy to please. Will make this again and again. No heavy feeling after eating this!!! Thanks Ina!!!

Wonderful! I just made this soup this morning and it turned out fantastic. I am not a big cooker but I found this recipe to be pretty easy. I love the soup and will definitely make it again! The recipe makes a lot of soup. I plan to freeze part of it for later!

Love it!! We enjoyed this so much, I just made it again for the third time in a month. This weekend's version utilized home made vegetable stock to keep it vegetarian for Lent. It's easily halved, by the way. Healthy and delicious... it's definitely a keeper!

So delicious- Have made it several times without changing anything from the recipe. Hearty, flavorful AND healthy. It works well with regular brown lentils as well, just takes slightly longer to cook.
