This recipe was delicious. I was surprized how fast the sweet potatoe cooked and I loved all the flavors mixed together. It is a healthy choice, easy, and filling. I highly recommend this for a during the week dinner meal. Enjoy.

Just had to tell Janette and Christina how much I enjoyed their Jerk Shrimp Stri-Fry. I followed their recipe to a "T" and the only thing I added, at the end, was some soy sauce added to the rice. The vegetables were nice and crisp(I was some what worried that the sweet potato and carrot would not be cooked enough, but to my grateful surprise they came out just fine, it had just enough heat or spice, and the shrimps cooked perfectly. I will definitely keep this recipe. So, again, thank you both for a wonderful dinner!!

The only thing I'll do differently next time is cook the sweet potato a little longer, and keep some marinade to pour over the shrimp and vegetables when they are combined in the skillet. Delicious, healthy, and easy!

this dish is really great! The combination of everything so many different things came out very tasty, and it was VERY easy to make. It was really just cutting and throwing into a pan. It is also very colorful! Only thing i would do differently in the future is cut the pinapple into smaller chunks.
