Lime Marinated Chicken Wings with Avocado Dip

Ingredients

  • 1 jalapeno pepper, seeded and sliced
  • 4 cloves garlic, chopped
  • 1/4 cup vegetables oil
  • 1 tablespoon tomato paste
  • Pinch salt
  • 2 tablespoons honey
  • 1 1/2 limes, juiced
  • 3 pounds chicken wings, rinsed and patted dry
  • 1/2 lime, zested
  • Avocado Dip, recipe follows

Directions

In a blender, puree until smooth the jalapeno pepper, garlic, vegetable oil, tomato paste, salt, honey and lime juice. Pour marinade over the chicken. Add the lime zest and toss to coat. Cover with plastic wrap and refrigerate overnight.

Preheat boiler to medium heat.

Arrange chicken on a baking sheet lined with parchment paper. Broil chicken at least 6 inches from the heat for 4 to 5 minutes per side; or until chicken is crispy on the outside and cooked through. Serve with Avocado Dip.

Avocado Dip:

  • 1 avocado
  • 3 tablespoons chopped fresh cilantro leaves
  • 1 1/2 teaspoons lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • Freshly ground pepper

Pit and peel avocado. Place avocado in a medium bowl; mash. Fold in 3 tablespoons chopped fresh cilantro leaves; lime juice, garlic and salt; and freshly ground black pepper, to taste.

    Disappointing flavors for the work

    I used 2 jalapeno and doubled the honey, per another review. But the marinade did not penetrate the chicken wings at all. I... am not a salt-lover by any means, but this recipe cries for any bit of flavor. SO disappointing - the 24 hour marinade felt almost useless. The charred skin had some remnants of flavor, but the meat was bland, bland, bland. There are a thousand and one better recipes out there. I wish I had done a search for them, before I got pulled in my Paula and Bobby oohing and aahing over these letdown wings on the show.Read more

    I saw Paula and Bobby doing wings and thought it looked really good. Then I read some of the reviews and thought maybe not. ... I am so glad I tried them. My family loved them! I changed a couple of things -- I added 2 peppers and used olive oil and cut the amount for marinade in half -- then drizzled wings with olive oil before cooking and added house seasoning before cooking. Oh, I forgot to puree ingredients for marinade -- but they were finally diced. They were just great! Thanks Paula!Read more

    For the marinade, I left out the oil.....as it tends to act as a barrier on the chicken and doesn't allow the flavors of the... other ingredients infuse into the meat. Try leaving out the oil....you'll find that the flavor is fabulous! Read more

    Not much flavor considering the marinate ingredients and time to marinate. I liked them OK but prefer something with more... flavor and some punch. Like I said, If you have kids or older people that can't tolerate hot wings, these are for you. I would rate the Avocado dip as "POOR" it had way too much Cilantro which has a tendency to over power when used in excess. It seems to be "hip" to add Cilantro to everything these days. I'm not much of a fan. . . . . The dip needed something to make it "creamier" as well . . . . Thx !Read more
