Not only was this easy to prepare, it was easy to eat! What a great combination of flavors, color and texture. For sure one of many favorites!

Susie, you are wonderful. I'd love to try more of your recipes. When I saw the IRON CHEF episode I was so excited by this dish b/c we have a huge crop of rainbow chard in our garden. Made a variation of this last night at my in-laws' (used boneless, skinless chicken, though; MIL is allergic to lobster. Everybody loved it (my brother-in-law who went to culinary school was impressed! Thank you a million times and please write a cookbook!!! =

Delicious. Substituted sole (baked first for cooked lobster tail. Be careful not to let the chard get too soggy. Feta cheese a must.
