I've been a fan of spaghetti squash for years. I microwave it. Simply cut it in half and place it cut side down in a shallow bowl of water cover in saran wrap. When you can pierce the skin with a knife, it's done. Also, I added nutmeg to the sauce.

This was good and I only gave it 3 stars because it was so rich and sometimes my stomach doesn't like very rich sauces. But it was a nice change for Spaghetti Squash.

Wow, I was amazed. It worked just like it said it would. I can eat Spaghetti Alfredowhile on a low carb diet. Who would have guessed. It was easy and even the kids liked it.
    The sauce is yummy.

I did like the squash, but the sweetness with the cream sauce did not appeal to me. next time alfredo will have to be pasta alfredo. I'll run an extra mile!

We enjoyed this dish. I served it over whole wheat pasta for our kids and they scarfed it down!

Wonderful recipe. We had it with steak and I ended up only eating this. I am not on a low carb diet, but was looking for a recipe to cook spaghetti squash. This is a keeper for sure. My husband and 2 yr old loved it too. I think it needs more salt. I also added more garlic, but I don't think it needed it.

This is so easy to make and it's tasty. I didn't miss the pasta at all plus it was very filling.

I hate squash. But this was wonderful.
It wash crisp and took on the flavor of the alfredo sauce. George has really put together some Great Lo-carb recipes!
