I only gave it four stars because I have not actually made it. I had this on a trip to Guatemala, in someone's home. Oh my goodness, its been two years and I still remember how delicious it was! I had two bowls and would have had more if I could have. I've travelled a lot, and this was one of the simplest, most delicious meals I've ever had! She served it with fresh avocado, which you would scoop out with a spoon and drop into the stew. And true to its name, the tablecloth had little stains--which the owner pointed out proudly, laughing saying she made it when honored guests came and these were her spots of memories... ;
