Ingredients
  • 1 cup jasmine rice
  • 3/4 cup canned coconut milk
  • 1/4 cup brown sugar
  • 1 ripe mango, diced
  • 2 tablespoons finely chopped crystallized ginger
Directions

Cook or steam rice in water according to package directions. Let cool and transfer to a portable bowl. Mix coconut milk and brown sugar; pour over rice. Add mango and mix well. Sprinkle with crystallized ginger and mix again.

    I thought this was really really good! we loved it! The best part is that it was so easy. Its super sweet, but it is supposed to be. But if you could cut back on some of the brown sugar if you needed too.
    This is pretty good--and super easy--but there's an important caveat: 
     
    It has to be eaten soon after being prepared. I put it in the fridge for a couple of hours, and by the time we took it out for dessert, the coconut milk mixture had been mostly absorbed by the rice. At that point, it's not really sticky rice so much as rice with coconut flavoring.
