We have made this recipe several times for friends, and it is ALWAYS a hit! We substitute ancho chiles for the guajillo chiles. They don't fall apart if you don't use all of the sauce.
We reserve some of the sauce for migas in the morning. So yummy!

These were amazing, I made these for friends, some of whom don't like pork so I used beef and you really get that wonderful smoky, yet sweet traditional al pastor taste. Really worth making and make sure you take the seeds out of the chiles, they don't provide heat like spicy chiles and if you leave them in, they'll make the burgers break apart. But all in all, great recipe!!

Yeah, I know what everyone is talking about them falling apart. I tried NOT to move them at all. I waited about 5 minutes or so to flip them. They DIDN'T really fall apart too much. But I could see that if you move them a lot, they will fall apart totally. I just sprayed some pam for the grill and burgers didn't stick to it. Next time I might put aluminum (grill aluminum on the grill and place the burgers on top. I also placed the burger bun with mayo on the grill to warm them up a little and give it a good flavor. I didn't put a pineapple slice on it. I don't really like that. But still, the burger tasted really good! I also was very hesitant about the cilantro and onion toping...but I loved it! It really tasted like a al pastor taco!!! My husband hasn't tried it, he is very picky and we'll see if he likes them! Also made the cilantro fries and they both go together great! I didn't put ketchup on the burger...but ate fries with ketchup.

OMG this my favorite burger. 1s time we did with regular hamburger. We have been buying fresh pineapple more now and love it grilled. We used Red New Mexico chilies as we could not find Guajillo chilies here in Syracuse, NY. Still delicious! Cilantro is a staple in our home I grew up with it & could not believe my husband family never had it before. I use to live out West now live in the East. Now have fresh cilantro along with different peppers in our garden fresh during the season. The Cilantro fries to die for.... Love this show & her recipes. Love Marcela she is young cutest chef I have ever seen. Love her accent.

I was so looking forward to this burger only to be so disappointed! I agree with another review on here "had good expectation for this Burger. I followed the directions to a tee. They fell apart on the grill and couldn't them to flip. Definately needs a binder. Flavor was ok, don't think all be making these again. " They stuck to the grill fell apart big time, and we could not salvage them!

I thought these burgers were fantastic. Tasted just like an al pastor taco you'd get in the streets of T.J. The flavor was incredible - nice mix with the chilis and sweetness of the pineapple. I did use canned pineapple and added an egg and some panko crumbs just because of what some of the reviewers said about them falling apart. Next time will try without it. I think they would have been fine. First time my husband didn't add ketchup to his burger!! Excellent recipe - thanks.

Fell apart on the grill. Maybe the pork had too much added water. Will try something different to avoid this next time. Used canned chipotle peppers. Very good!!! The dude didn't think he would like the pineapple slice on top but tried and liked.\

    Very flavorful!
