    I have not had butternut squash soup in years. I saw this recipe on this morning with Marcella and thought it would be good. It was better than good. The balance between the Butternut Squash and the Chipotles was great. I would definitely make it again. The creme topper is a nice addition, but the soup itself is so creamy you really don?t need it. I can?t wait to try the lamb!

    I watched the show this morning and ran out to get the ingredients to make it for dinner...FABULOUS! The adobe/sour cream was a wonderful accent :

    Loved the soup. I was surprised that the only spices needed were salt and pepper, since it's so flavorful. I did not have a chipotle pepper, so I used canned green chilis with a drop of smoke sauce.

    This soup was delicious. I used homemade chicken stock instead of commercial, which works better for me. I will definitely make this again. To those who claim that this delicious soup isn't 'authentic' Mexican food, you're wrong. Butternut squash is native to Mexico, and people eat it there all the time.

    Marcela's version of Sopa de Calabaza (Squash Soup is 10 times more authentic than Sunny's version of Chicken Mole, because Sunny omitted one key ingredient, chocolate, to her mole. Just because she served Molten Chocolate Cake in the same kitchen as her Chicken with Pumpkin-Ancho mole sauce, doesn't make it authentic. Marcela's program is Nuevo Mexican!

    I am in agreement with the first post. While I am sure the recipes are good, they are really not Mexican at all...at least not the type most people want. I was really happy to see that Food Network was finally getting a Mexican show on the air because it was sorely needed. How disappointing it is that it isn't very Mexican at all. These recipes could have been on any other show and if you asked me, I would have never said it was Mexican. For that matter, even Sunny Anderson is making chicken mole today, something that you would hope to find on Mexican Made Easy! Hopefully next week's show will actually live up to its' name!

    I commend Food Network for bringing in cooks from different cultures. I am sure this soup is good. What is it that made it Mexican...the chipoltle cream? She is fun to watch, but she needs to make authentic mexican food, not food from other cultures with a "mexican twist". The only authentic Spanish/Mexican cook on here is Daisy Martinez. Marcela and Ingrid need to get with the program. Bring back Daisy!!!!!!
