This recipe was AMAZING! I made it vegetarian, by using Organic Vegetable broth. I started with Lucini Extra Virgin Olive Oil, which always makes everything taste better. I made the recipe as directed, but added twice the amount of garlic, a touch of Vegeta (European Vegetable seasoning, a dash of Cumin, and topped the soup with some cilantro. I also only blended half of the soup. My husband and I like the soup to be a little chunky. I would definitely recommend this soup!!!!

I love butternut squash soup and this was a great recipe. I liked how Marcela sugggested to roast the entire half of the squash. This was easier than all the cutting into pieces. I loved the soup but my children thought it was a little spicy. The chipotle does add a zip so next time, I would omit it from the soup and just add it in the cream topping for those who like the spice. Really great - will make again soon.

I really like this soup! Very tasty and not fattening since it's not a heavy cream based soup. I, however, left out the chipolte and chipolte cream since I cannot stand peppers but it was still wonderful!

I saw this recipe and decided to try it. ive never tasted butternut squash and did not know what to expect. my husband and i are trying to eat healthier and this was perfect.
I omitted celery and added green squash and when it was done and pureed i added chopped roasted red pepper and cubed boiled chicken (no seasoning, left over from last nights dinner i think both the red pepper and chicken added great flavor and my 2 year old daughter even enjoyed it!
the chipotle sour cream was wonderful and would be great on crackers!!!

I made this. It is easy. Only difference is I used light sour cream. This is a heatlty/lowfat recipe for butternut squash soup and it is delicious. My husband and I really enjoyed this and I will be making it again.
