Wow!. This was delicious!. I have made this soup before but this version far outshines mine. It is a winner! I am thinking of making it for a dinner we have to celebrate autumn.

Loved this soup! I used vegetable broth instead of the chicken broth to make it vegetarian friendly for some of my family members and a bit of cumin as a reader suggested. Everyone loved it. Thanks Marcela!

This was so easy to make and very good. I added some cumin as well as the chipotles. I used Fage yogurt instead of sour cream for the chipotle cream. I'll definitely make this again.

Fantastic! I only like squash that is prepared in a savory manner and this recipe was perfect. I wanted something other than the typical chili for Sunday football. This was hearty and filling with a bit of a kick. Fantastic. And my husband loved it!

I bought a butternut squash because I liked the way it looked. I made this recipe minus the chipotle (my amor don't like chipotle and it was delicioso. I added a quesadilla made with cheese & chorizo on the side for a complete meal. I used pita bread instead of tortillas because that is what I had and it was YUMMY. LOVE IT. I will keep it to impress my familia and friends.

I added a bit too much adobo for my husband's liking, so I added a small amount apple juice and some pureed applesauce to counter the heat. It made the soup smoky & sweet. Added some crumbled crispy pancetta on top of the sour cream too. Yum! The soup is really good!

This soup was very tasty. However, I thought there was a bit too much heat for me, and I didn't even use all the chipotle. Still, it was very good. I added cumin powder to the vegetables when cooking which helped cut back on the salt and added more Mexican flare.
