    I made this soup as directed except I added a lot more chipotle because we like things spicy. I really suggest adding the crema because it offers a contrast and helps to balance out the soup. Easy and delicious!

    This soup has a nice, silky texture with just delicious flavors. I like the fact that the level of heat can be adjusted by the amount of chipotle cream used (or not used. I also like the fact that with the possible exception of the chipotle peppers, most of the ingredients are readily available, if not on hand, and it is a very simple dish to create. I think the amount of stock used depends on how much squash you end up with based on exact size. We added some pumpkin seeds for a bit of crunch (I think that part was on the show. Would definitely make this again.

    Just for the record - anyone who doubts Marcela's "authenticity" should read her bio on her website.

    I've made butternut squash soup many times before but usually with apples & a little cream, so I wasn't sure I would like this rendition. It was excellent! I didn't mind the 2 tsp of chipotle but it was a bit too much for my friend. I also only used the 4 cups of stock. It would have been too thin w/6 cups.

    I love this Butternut Squash soup, I have made it plenty of times. Although what I love even more is the easy Chipotle Cream sauce that I made even spicier than the recipe called for, that I had never done before. I love Marcela and her ideas of making it with Latin Flavor, especially since I am Mexican-American, I really want to be able to make dishes with a kick that my family will recognize and love. You go Chica!

    I for one am disappointed at the comments that the recipes are not "authentic" enough. Enough already! Delicious is delicious, period. I for one am just glad to have new and different recipes to try. Is every recipe on Everyday Italian authentic Italian? Not all, but the recipes are creative and good and have an Italian influence. I made this soup today and loved it. I've made butternut squash soup many times and the chipotle peppers made this one truly different. I will definitely be trying more of Marcela's recipes. Just make good food people and quit being so negative.

    I love butternut squash soup. This one benefits from the extra kick of the chipotles in adobo sauce and from the chipotle crema. Nice one. I have now made several of Marcela's recipes and I think they're delicious. I am disappointed to read comments from people saying that hers are not "real Mexican" recipes. What is "real Mexican"? Like any cuisine, Mexican cooking (and its myriad regional and local variations grows and evolves and changes. I think these recipes are delicious and whether they are 100 percent Mexican or merely influenced by Mexican flavors and traditions, I think Marcela is a welcome addition to the Food Network.     Thank you Food Network for providing us with a show that highlights all types of Real Mexican Food from all over the country of Mexico and not just the stereotypical rice, beans, and tortillas. My husband is Mexican and loves this food. He has been asking me for a 2 years to learn to cook authentic Mexican food. Every time I have presented him with something that I assumed was "mexican", meaning what American Mexican food is, he laughed. Now that this show is on, he's finally happy with what I'm cooking! Marcela's recipes are amazingly simple and really yummy.

    I had this soup as a kid all the time. My mom makes a similar version. Mexican eat buternut squash and lamb. Please do not assume that because it does not feature cheddar cheese or beans, it is not mexican food. Italian food consists of other ingredients other than pasta. This chef is excellent and should not be judged based on what is considered to be stereotypical mexican ingredients.

    This was an excellent blend of traditional fall season soup, with a nice spicy kick of Chipotle.....As to the review posted by Rochelle Lodi, CA. Mexican food is more than just rice, beans and tacos. Depending on the region of Mexico a person's family coming from, recipes/ingredients will vary from household to household.

    Why does this girl have a Mexican Cooking show? rack of lanb with mint sauce, squash pumpkin soup? I think that they just wanted to fill that spot with a cute, young girl, but a mexican cook she is not..........
