Rice was awesome! I only used one pepper for fear it would be too hot but what great flavor the roasted pepper added next time I'm using two!

I have made this recipe twice and love it. It's a great side dish with all types of meals. If you do use sour cream instead of Mexican crema, do make sure to thin it a bit. I also found this rice dish to be great reheated the next day as well. If you like Marcela, I would highly recommend her cookbook "Fresh Mexico". I use it all the time.
