Ingredients
- 2 tablespoons freshly squeezed lime juice (from approximately 1 large lime)
- 1/2 teaspoon finely grated lime zest
- 1/2 Haas avocado, peeled and pitted
- 1/2 teaspoon kosher salt, plus more for seasoning
- 1/2 teaspoon freshly ground black pepper, plus more for seasoning
- 1/4 cup extra-virgin olive oil
- 2 oranges
- 2 bunches watercress, thick stems removed (about 4 cups)
- 1/4 cup dried cranberries
- 1 small jicama, peeled and cut into very thin slices
Directions
Process the lime juice, zest, avocado, salt, and pepper in a mini food processor until smooth. Gradually add the oil until emulsified. Season the dressing, to taste, with additional salt and pepper.
Using a paring knife and working over a large bowl to catch the juice, remove the peel and white pith from the oranges. Cut between the membranes to remove the segments directly into the bowl. Squeeze any excess juice from the membranes directly into the bowl and discard the membranes. Add the watercress and dried cranberries. Toss with the orange juice and season with salt and pepper, to taste.
To serve: Spread 1 side of the jicama slices with a little of the dressing. Using the jicama slices as you would a tortilla, place the watercress salad in the center of each jicama slice and fold to make tacos.
Cook's Note: The dressing can also be made by hand. Use a fork to mash the avocado until smooth and add the lime zest and juice. Whisking constantly, drizzle in the oil until smooth. Season with salt and pepper, to taste.

I like that Burguete converted this to a salad. It seems you could even add a spicy sauteed shrimp to the salad and make it a light meal. Melissa, bland indicates to me that you didn't add enough salt and pepper. If you haven't been cooking very long you'll come to see that you season to your taste. I rarely use the amount of seasonings that are called for in the recipe. I, personally, don't like a lot of salt and others do so the chef may be easy on the seasonings for that reason and instructing the reader to season to taste. Good luck and happy cooking.

This flavor combination is 5 star but I like a substantial taco so the jicama-wrapped orange slices and greens didn't appeal to me. Instead, I converted the recipe into a salad by mixing together the greens (my store was out of watercress so I substituted baby arugula, cranberries, and 1/2 of a jicama that I shredded in the food processor. I made the dressing exactly as the recipe directed. I paired the salad with the 'Spicy Shrimp and Mushroom Casserole' highlighted in the same episode. It was a super combination that my husband and I are still talking about a day later!
