at christmas my daughter was visiting from fargo n.d and we were watching the foodnet show mexcian made easy.
this is the best totilla soup i have ever had. my daughter went home and made it for her roommates. they loved it...try it you will love it too.

Very good and easy to make. My nephew was sick, so I sent some home to him. He loved it. I never thought to add tortilla into the broth. The cast iron skillet really did the trick to roast the veggies. I will make this my number one tortilla soup!

What a wonderful recipe! My Mom and I both saw the episode seperately and wanted to try it. I made it for us tonight and we both agreed it was a hit!
So many great layers of flavor for such a simple and fun to make soup.
I didn't have the dried chile, so I steamed an Anaheim chile for about a minute and charred it with the rest of the veggies in a cast iron skillet. I also added two small tomatillos that I needed to use up.
This soup is perfect as is, but as many other reviewers noted, the possibilities are endless.
I love that this can easily be made in into a vegitarian recipe. I think in the future I may decrease the amount of stock and use it as a sauce over chicken and rice. Also, I can imagine that cutting out the stock and tortillas altogether and blending the veggies with sour cream would make a fantastic dip for homemade tortilla chips!
I'm very thankful that this sweet little Mexican pixie, Marcela, is sharing her authentic recipes and stories with the rest of us!

VERY VERY GOOD. The only modification I made, was that I grilled a chicken breast, and then cut it into small size pieces and added it to the soup. Would recommend it.

This got rave reviews from my family. Roasting the vegetables in the cast iron skillet made it wonderful.
