Love the broth! The tortillas give it an extra boost to the Mexican flavor profile. I must admit that I added my own touches - serrano pepper, cumin seeds and shredded chicken - but all in all it was a hit with my siblings and husband!!!! Thanks Marcela:

I made this soup this weekend and it was delicious! I must confess I didn't keep it vegetarian. I went a little overboard, but well worth it when I added 1-1/2 lbs of chicken tenders, a can of hominy(traditionally in a Mexican soup called Pozole and fresh corn off the cobb; of course I coldn't resist condiments like the Mexican crema, added chunks of avocado and a squeeze of lime to it as well. Wow it was excellent!

Bravo Marcella for sharing your wonderful recipes. Charring the vegetables in a cast iron skillet really gives this soup a depth of flavor with that smokiness - a fabulous touch. We have made this soup several times now and each time it gets better and better. Also, this was very easy to make and canned chicken broth worked well. Our touch? Try substituting a fresh seeded jalapeno for the dried chile for a fresher, lighter soup. Or add both. Also very refreshing!

Very easy & tasty! I found the toppings really added the pizazz to this dish. I actually found some Queso fresco (first time I had it. I added the cheese, sour cream, avocado & fried up some of her tortilla strips. Everything together equalled one very tasty soup. I think if I didn't have the toppings...it might be a little bland.

I love reading all the comments and reviews, they really helped me draw more flavor out of this soup. I added cumin and charred a jalapeno for more heat. My family REALLY likes heat. I also added about 1 T. of Agave Nectar which seemed to balance out the acid. The next time, and there will be a next time, I will char/roast the veggies in a high oven, in my experience I get a deeper more intense flavor out of them. All in all this is an easy, healthy, and tasty soup.

I have to say I felt like the soup lacked depth. Maybe I needed to char the veggies longer. I did add chicken and cumin and I love the chipotle chiles. Great addition!! Looking forward to trying some more recipes from this host.

Truly delicious! Quick...Easy...a squeeze of lime and shredded rotisserie chicken are great additions and make it a meal! We just used store bought tortilla chips instead of frying our own.
