    I just made this last night and used queso fresco instead of mozzarella as she mentioned in the episode, otherwise I followed it exactly. It turned out so yummy - my family loved it! The poblano sauce isn't too spicy, but adds a really nice warmth to the dish. The queso fresco had a little more tartness and firmness after baking than mozzarella does, so I'm glad I used it instead. It does take awhile to make the crepes and the sauce, but it's not really difficult or complicated. Thanks Marcela for such a great recipe that I will definitely do again and again!!

    OMGosh...this deserves 10 stars! Made this on New Year's Day and it was a hit! Now I know my 2011 will be successful and there will be peace in the world. Love Love Love it.
