This was so easy and delicious! I have never had anything like this before and thought I would try it last night. Husband loves it (though he has no idea there is mayonnaise in there. Can't wait to have company over and try this out on them!
April get over yourself. It's a recipe...not world peace. I enjoy watching the young lady!

I have made versions of this many times since discovering "Corn In A Cup" during visits to Laredo. I prefer to make layers of the ingredients, ending with a squirt of FRESH lime juice on top. Although I can feel my arteries hardening as I eat, it becomes addictive. Use the Mexican cheese for authenticity. Especially delicious with grilled corn that has been freshly cut from the cob.

This corn recipe was so much fun to make and my grandchildren loved it. I followed the recipe just as she did it on her show this morning and I wouldn't change a thing. I enjoy your show.
