We've made this twice already and it will be a constant in our kitchen. We make it when we make tacos and use it in the taco or on the side. Love it.

Marcela - this is amazing! My girlfriend and I double the recipe because we love to eat it warmed up as a leftover. "Raucus", as we call it, is a go to staple for us. It makes our mouths water whenever we think about it.

Everyone at my party absolutely loved this dish. A couple of them went home with the recipe.
I took away one star because I think some of the ingredient ratios are a bit off. For example, I doubled the corn recipe because two kernels didn't appear to be nearly enough. Also, next time I will put less cheese, it was way too stringy and not as creamy as I expected because of the cheese.
However, an overall great and unique dish!

Love this recipe!!! Made it twice in one week for hubby and his bro! now I am making it again to take to a picnic! Keep up the good work! (Word to wise: peppers can get HOT! And after they sit over nite (think leftovers it really gets HOT! But you just can't stop eating it.
