    We've made this twice already and it will be a constant in our kitchen. We make it when we make tacos and use it in the taco or on the side. Love it.

    this recipe is so good and so easy. was confused whether it was an appetizer or a side dish or what??? i make it as a side dish/topping when i make emeril's chicken chimichangas.

    Marcela - this is amazing! My girlfriend and I double the recipe because we love to eat it warmed up as a leftover. "Raucus", as we call it, is a go to staple for us. It makes our mouths water whenever we think about it.

    Everyone at my party absolutely loved this dish. A couple of them went home with the recipe.
    I took away one star because I think some of the ingredient ratios are a bit off. For example, I doubled the corn recipe because two kernels didn't appear to be nearly enough. Also, next time I will put less cheese, it was way too stringy and not as creamy as I expected because of the cheese.
    However, an overall great and unique dish!

    This my third time making this, but I have made this a predominently a corn dish. I used 6 cobs of corn. Its incredible!

    Love this recipe!!! Made it twice in one week for hubby and his bro! now I am making it again to take to a picnic! Keep up the good work! (Word to wise: peppers can get HOT! And after they sit over nite (think leftovers it really gets HOT! But you just can't stop eating it.
