Easy recipe that really showcases the flavor of the poblanos. I actually made the entire dish in a cast iron skillet on my outdoor grill and it was fantastic. My husband and I ate just about the entire batch. Only one change-up which I thought was an enhancer. I had already grilled some corn-on-the-cob and it added a bit of that smoky, grilled corn flavor to the final dish. Just an idea for anyone out there with some leftover grilled ears of corn (I would grill the corn again for that added flavor, actually. Great dish Marcela! It really doesn't require a ton of cream and crema to get the silky richness. We will make this again and again! Thank you!

I made this recipe after watchin this episode (along with the other two dishes for my first BBQ of the season. Everyone loved them all, but they all wanted the recipe for this. I don't think they'd ever had anything quite like it. It was creamy, cheesey, slightly spicey, deliciousness!

My husband and I were married last year and his family is from Mexico. I have never attempted to make anything from his childhood in fear that I would mess it up. This show has made cooking Mexican food fun and most importantly easy! I went to a family party and brought this dish with me and his mother even asked me for the recipe! She said she hadn't tasted Rajas that good in a long time and asked me what my secret was! I was giggling on the inside but said I was studying hard to learn all I could about Mexican cuisine!

As I was making this recipe I thought it was a bit bland. My poblanos did not have much of a kick, so I was disappointed. (Guess it depends on the poblanos that are available. In any case, I added sliced chipotles in adobo sauce and it was delicious! This is a great side dish for so many meals/ in a tortilla for a light meal/or used as a topper for a protein.
Love recipes that are diverse.

This dish sounds very good. I love poblano's. I don't even use green bell peppers anymore, If a recipe calls for cooked green bell pepper I will replace it with poblano peppers! Thanks to the person who posted Marcela's web site. I didn't know she had one, will check it out. I can say it you use can green chili's in this recipe your missing it! Use fresh poblano's!! Made it at my girls night out party and was a hit. I used non-fat half and half instead of the cream as well as light sour cream and it was just as fabulous. I am actually making it tonight again just for my familia.
