    I have made this recipe twice now, and both times it turned out amazing. Everyone in my family loved it, including my 10 year old son who can sometimes be picky. I am not a fan of chunky tomatoes, so I opted to use crushed tomatoes instead (about a cup and a half and used about 2.5 cups of chicken broth. I also couldn't find a serrano chile anywhere, so used a jalapeno instead. I left it in whole, and simply removed when rice was cooked. I also omitted the green peas due to persnal tastes. This was a very simple recipe, easy to make, yet absolutely delicious. I would highly recommend it and fully intend to make this again.

    I really enjoyed this rice. I did make a few modifications to the recipe which worked well for me. I blended the onion in with the tomatoes as the texture of onion is not one i enjoy so that way i get the flavour and not the mouth feel. The other changes i made was i added cilantro to the broth and also used a jalapeno as someone else recommended. Will be trying to play with the recipe to make less as there is only me here. This goes really well with Alton Browns Fish Taco recipe from his Good Eats show.

    Our family really enjoyed this rice. It does make a lot, so if your group is small, you may want to halve the recipe. I used a can of Rotel tomatoes plus 1 medium large tomato (instead of 3 whole tomatoes plus about 1 tablespoon of tomato paste (whatever was left in the tube I had in the fridge - worked great. Since serrano is a bit hot for our tastes, I used a jalapeno instead, and seeded and deveined it - was perfect for our "heat tolerance" level. I didn't have any peas, so I left those out, and don't feel we missed anything. The rice does reheat well in the microwave - just don't dry it out too much. This is an easy recipe and I will make it again.

    Loved this recipe. Where have you been all my life?? Did have to add more water because my rice was not cooked, but overall, fantastic.

    I would really like to make this, but I don't want to be stuck in the kitchen on the day of the party I plan on making this for. Can I make this ahead, does it still taste good and fresh like? Please let me know how the leftovers are taste wise .thank you
