    i had try to make this rice before and no luck. but this recipe is the perfect one, my family enjoy this one a lot. i am very happy with it. it is foolproof

    Yummy! This rice is so good! I was taught by my mom to make the exact same rice but without the carrots and peas. I absolutley love it with the veggies and what a great way to include some in your daily diet.

    I would love latinloopyloo's Mexican Rice receipe since their review was so negative. You must make a delicious one and I can't wait to try it. Please send!

    This rice was amazing!!! I did substitute about half of a chipotle pepper in adobo sauce for the serrano chile (and about 1/2 tsp. of adobo sauce. I think any more than that, and it might be too spicy for my family. Not sure why some people have a problem with it coming out mushy. I cooked it for 20-25 min. then lowered the flame a bit lower, added the peas, stirred the rice and let it cook for about another 5 min. The rice was perfectly cooked, had wonderful flavors and the colors were beautiful. Will def make this again!!

    I thought the rice had a very nice flavor. The only problem I had was it got mushy. I guess I overcooked it. I always have a problem with sticky or mushy rice.

    Love, Love, Love It!!! This rice dish has a light, fresh flavor and a perfect texture. My husband said it was perhaps his favorite mexican rice that I have made (I cook a lot, so this is pretty high praise. We made this according to direction, and it came out perfect. We will definitely make again.

    SO GOOD, AND JUST THE WAY IT SHOULD TASTE, NEXT TIME I WILL USE THE TOMATO PUREE INSTEAD OF CUTTING UP THE TOMATOES AND PUTTING THEM IN THE BLENDER & STRAINING THEM, BUT OTHER THAN THAT I WOULD NOT CHANGE A THING.

    Don't know what I did but both times I attempted to make this, did not turn out well at all. Edible, but plenty left over, no one took seconds. Looked so good too. I guess everyone has a different idea of "Mexican Rice"
