    I cover my eggs when cooking to just set the whites makes them perfect and serve with avacado slices and chorizo. What a great recipe...Ole!!!

    me and my fiance loved the huevos rancheros we even eat it 2 times 2day ones for breakfast and ones again for diner ....we really like the green salsa it has perfect not to hot,it totally need beans though and mexican cream

    Just finished breakfast and it was great. My husband loved it. I grilled the veggies on the grill outside and added half more Serrano chile we like hot.

    Loved it! My husband and I ate tons of huevos rancheros on our honeymoon. He made me these one night and 'recreated' our honeymoon by playing ocean sounds and making me a banana dacquiri!

    Both sauces were easy to make, and even tased great reheated the next day. We served with a slice of avacado on top.

    I broiled the ingredients for each salsas on a wire rack with a jelly roll pan underneath. Then blended and simmered in two small sauce pans on the back of the stove. After I fried each tortilla I placed on it's own plate in the still warm oven. After each set of eggs were done I served with the salsa on each side of the eggs with chorizo on the side. Very tasty, this one is going in the recipe binder.
