This is delicious. We make it at least once a month. We prefer using onion buns instead of bolillo rolls though.

This was absolutely delicious!!!! I didn't have bolillo rolls and instead used kaiser rolls and instead of 2 tbsp of fresh thyme , only used 1 tbsp. I will definitely be making this again and again, so GOOD!!!!

This sandwich is awesome!!!! The chipotle mayo is delish! I am going to start using it in all my sandwiches now.
Very easy to make, I cut the chicken in smaller pieces so it would cook faster, I have cheap olive oil so I didn't want to mess up my sandwhich so I didn't add the vinegar or the oil. It's probably much better that way. My husband said it was the best sandwich he had ever had so I will be making these again soon.
