    I loved it just the way it is. Quick and easy to make and delicious. I just used chicken stock instead of vegetable because I did not have any vegetable stock at home. I would use the chicken stock again.

    Very basic, easy and fun to make! I used store bought vegetable broth, Wolfgang Pucks is a must for me, it was delicious, get them on sale! I didn't want to overpower the freshness of this soup with cumin as suggested, but you may need more salt. The one chili didn't add spice, so no fear there. Gave it 5 stars because without the extra salt, my friend still drank her bowl dry, even after seconds! Here are the only changes I made...
    My additions:
    -fresh corn on the cob, cut into little mini cobs (or even cut from the kernel added in with the meatballs and zucchini.
    -more salt and pepper in the meatball mixture! Next time I'll try Montreal hamburger seasoning.
    -serve with fresh sliced lemon!
    -serve also with more chopped cilantro as a garnish, really brightens it up!

    I am half Mexican, and thought this tasted extremely authentic, particularly with fresh cilantro and lemon added as a garnish at the table. I also serve with warm corn tortillas to roll and dip inside.

    The recipe, as is, was a lunch bag let down. It definitely needs some pizzazz. There are many suggestions of adding chili powder, garlic powder and/or cumin...I wish we'd of done that!

    I would have given this a 5 but I had to make some alterations such as adding more spices to give this bland treat a little more pizazz! Overall I swapped sirloin for 99% FF turkey breast, used brown in stead of white rice and added an extra potato. The cooking time was a little longer due to the brown rice, but overall fabulous, healthy and fresh ingredients! It for sure needs garlic powder, salt, pepper, and chili powder as suggested by other reviewers.

    very tasty, although i must say tweaking was a must. the meatballs were very good. i'm not used to the cilantro and maybe used a little too much, but delish just the same. oh yes, I did add tomatoes.

    Fantastic!!!

    I tweaked the recipe to my liking but the seasoning and making of the albondigas were fantastic and to die for!!! My husband [who is out hunting right now] is so jealous at the fact that we are eating this without him! I used the tomato puree that was given for Marcela's Mexico style pasta [a.k.a. fideo] along with some veggie broth, the mexican meatballs, a chicken boullion, some garlic salt & a little comino [cumin powder].
    YUMMY YUMMY YUMMY......Love Mexican made easy!!! Keep'em recipes coming!!!!

    This is a very good soup, light weight and refreshing. I agree with the other reviewers, it was kind of bland so I too added some cumin, garlic, a dash of oregano and extra salt and pepper. I too added the whole can of tomato paste and some additional fresh cilantro. With these added seasonings, the soup is perfect! I'll definitely make this again.

    I wanted to give this a 5 star rating after I zipped it up a little. It was kind of bland originally. I added the cumin and garlic like the comments below, but then I also added a tsp. of Mrs. Dash, Table Blend, extra salt and pepper (like I said, it was bland and I also added the whole 6 oz. can of tomato paste. I also pre-cooked some long grain wild rice for the meatballs instead of using regular rice. (just to make it a little healthier Before serving, I also added a couple more Tblsp. of fresh cilantro while it was still simmering. Then it was AMAZING. I'll definitely make it again this winter.

    The flavor of this soup is fabulous! Made my own vegetable stock which is really easy. I would recommend adding cumin and garlic powder to the meatball mixture because they were kind of bland compared to the liquid. But overall, excellent.

    Really good soup. I added cumin and garlic salt (as another reviewer mentioned since I found it needed just a bit more seasoning. Great soup, will make again!
