Mexican Milanese Style Sandwiches ("Tortas")

  • 4 (4-ounce) chicken, beef or pork cutlets
  • Salt and freshly ground black pepper
  • 1 cup all-purpose flour, for dredging
  • 1 cup plain bread crumbs, for dredging
  • 2 eggs, beaten
  • Vegetable oil, for shallow frying
  • 4 Bolillo or Telera rolls or French bread
  • Chipotle mayonnaise, recipe follows
  • 4 lettuce leaves optional
  • 8 (1/4-inch) slices tomato
  • 12 (1/4-inch) slices avocado
  • 12 thin slices white onion
  • 12 pickled jalapeno slices or 4 canned chipotles in adobo
  • 8 lime wedges, for garnish
  • Chipotle Mayonnaise:
  • 1 canned chipotle chile in adobo sauce or 1/2 teaspoon hot sauce
  • 1 teaspoon fresh lime juice
  • 1/4 cup mayonnaise
  • Salt and freshly ground black pepper

Season the cutlets with salt and pepper, to taste. Put the flour in a dinner plate and season with salt and pepper. Put the bread crumbs in a second plate and the beaten eggs in a shallow bowl. Dip the cutlets into the flour, then the eggs and finally into the bread crumbs, pressing down on both sides so that the bread crumbs adhere to the meat.

Heat 1/2-inch oil in a large skillet to 350 degrees F. Pan-fry the cutlets in batches until golden, about 2 to 3 minutes per side depending on the thickness. Set aside to drain on paper towels.

To assemble the sandwiches, halve the rolls horizontally. Pull out the soft center of the slices and discard. Spread each roll evenly with the chipotle mayonnaise. Put the cutlets on the bottom halves of the rolls and top with lettuce, tomato, avocado, onion and jalapeno. Arrange the sandwiches on serving plates and garnish with lime wedges.

Chipotle Mayonnaise:

In a small bowl mash together the chipotle chile, lime juice and mayonnaise. Season with salt and pepper, to taste.

    My husband and I loved this recipy would definately do this again.
    I made these today, they were the best. I made chipotle mayo with a kick ( added extra chipotle used red onion and kept all other ingredients the same. My family LOVED them!

    WOW! Very delicious! It did take some time but well worth it. My family asked me to make it again the next day. The chipotle mayo is the key though...that little kick makes the torta come all together. :)
    Finally had a chance to make this recipe tonight. My family loved it!!! I have always wanted to make this for my husband since his mother makes her milanesas so good! He said they actually tasted better! Thanks for the recipe.
    This was the first episode I have ever seen of this new "Mexican made Easy" snow. After watching it, I went straight to the store to buy the ingrediants for these tortas. It was amazing! I have made it many times since (removing the jalapenos for an individual's less spicy tastes). I have not found a person I have made this for who hasn't loved it! For a sandwich its a little time inclusive. It still takes me about 20 or so minutes to make because of all the little slicing parts, but let me assure you, well worth the wait. Would reccomend to anyone!
    Excellent torta! I come from Guadalajara, Jalisco, Mexico, where we eat A LOT of tortas. I love the chipotle with mayo, it gives it a really good flavor! Even though it's a lot of little steps, it's pretty easy to make. It became our favorite dish!!!

    The chicken was delicious, but the mayo & jalapenos were way too hot for us. I know it's not Mexican, but next time I'll probably use a garlic-herb mayo that we love on other sandwiches. Otherwise, great!
    First choice for "sandwich night". The chicken came out just perfectly - tender and crispy on the outside with the blend of avocado, tomato and Chipotle mayo on a Portuguese roll - absolutely AWESOME. I will definitely make these again. I may try to bake the chicken next time on a baking sheet lightly oiled - they were not oily at all, but if we're going to eat these often, I may have to try to make them without frying. I used light mayo and the chile with adobo was wonderful. I'm going to use the leftovers for other sandwiches. Yum!
    Another great recipe. Easy to make and the sauce is makes the sandwich taste so good. I used the chipotles in adobo for the sauce. Yummy. You could make it lower calorie by not breading the meat.

    OMG!!! My girls are so picky! but they gave me a thumbs up (because they couldn't speak with the torta in their mouths). This will be something that was easy from the torta to the chiptole mayonnaise. This was really something!
    These Tortas are wonderful! My fiance gave them a "10" and he hardly ever says that. The only thing he wants next time is a little crispy bacon, but I don't want to do anything to mask that wonderful Chipotle mayonnaise! Thank you Marcella! I love your show!
    This was Great Marcella; Weather or not it's authentic, it's wonderful. Mayra sounds like she has a problem trying out anything you make. This isn't a challenge recipe either you like it or you don't. You don't have to be so nasty about it. Just don't make it and hush! oh well, you will complain about something else soon I'm sure.

    Milanesa that's the name. The traditional Mexican recipe is beef and Milanesa that's how they call the meat when you go to your butcher shop in Mexico. By the way this is not street food not in Baja. And belive me I now how to cook my mexican food.
    I LOVE Tortas and haven't had one since I went to Mexico in 2004. The flavors marry very well. However, I don't make my chipotle mayonnaise with lime juice. I find that it makes the bread soggy.

    This milanese torta was great! I would consider this comfort food, but definitely worth trying to eat if you're looking for something with great taste and contrast. Personally, I would skip the mayo on the bread next time, it makes it too greasy!
    These sandwiches are terrific ! I did make a couple of changes. I seasoned the chicken with a little cayenne pepper before breading, and also seasoned my flour with a little "house seasoning" which is garlic powder, onion powder, and crushed thyme, and a sprinkle of poultry seasoning. Also added more chipotle peppers to the sauce as we like it spicy. The panko crumbs are the best ! I also think a couple of strips of crispy bacon would be good on these.
    I made this recipe using beef milanesa instead of chicken and it was very, very good. My family and I really enjoyed the layer of flavor that the chipotle mayo brings to the torta. Absolutely delicious!!!!
