    This is such a great idea!! and a nice change from the chips and dip routine. I used a tablespoon of cream cheese in place of mayo and did not have any avocado on hand so left that out as well and the dip was great! Mexican squash is a new vegetable for me and this is a great way to eat it! love it!

    Made a double batch based on positive reviews. It was delicious! I added cilantro and a little chili for heat. Simple, fresh tasting and good with chayote and chips. Will make again and again and again...

    Using greek yogurt, made this sauce exactly as the recipe instructed. Then, didn't get a chance to cook the cayote squash until a few days later. The sauce kept very well in the fridge without separating or getting watery. This is a tasty way to put some bulk in your meal for not a lot of calories. Will probably add a little garlic and/or cilantro to the sauce next time. Can also easily spice it up with something like a few drops of Chipotle Tabasco. Yum! Highly recommend this.

    I have never had chayote squash but....I will from now on. This was very good, the dip never really did thicken much, but so what the taste was great, did not care if I had garlic in it or not, just the right amount of cumin, I peeled the squash. The squash is also very good cold with the dip, I really enjoyed that dip, I will look for other recipes with this squash...Thanks...please try this.

    for the dip? Please add some crushed garlic. For some reason she leaves garlic out of a lot of dishes, and it really does make a difference.

    I have always seen the squash at the store and thought "Wish I knew what to do with it" So I had to try this recipe.

    Oh so very yummy. Made it at lunch today with the kids. I should have known to go very light or not at all on cumin, two of my kids don't like it. They still ate it. Another of my kids said I should add cilantro, so we quick did. Put it over the top delish for us. They totally pigged it down. Going to be a regular around here.

    Didn't buy the chayote yet, but made the dip this morning and drizzled it on my over-easy eggs. Deliciously light and healthy, but definitely had to add a few pinches of salt. I used a whole avocado instead of half.

    the dip was fantastic. good on pitas after I ran out of squash! the chayote is very mild and was better after a little salt & pepper were sprinkled over it. Definitely would be a unique appetizer to serve to friends. I am going to look into further uses of Chayote. I will definitely make this again.

    I tried this recipe because I was curious to try chayote. It's good! The dip is very light and refreshing. I didn't have any mayo and so only used yogurt in mine but it had a really nice taste with the pepper and avocado together. (I actually used a slightly hot pepper since that's what I had but I liked a bit of heat. I'm sure with the mayo it would have an even creamier and richer texture and I would definitely try it again just as soon as I buy some! (And the chayote was good, too! - I'm stewing the leftover right now tomatoes per 2 Hot Tamales.
