    I love this recipe its a whole new twist on the regular cupcake.Everyone loved them when i made them for a small family party

    The cupcake alone has such a nice flavor but combined with the caramel and frosting, so good! Not too sweet, even my family members that usually scrap off the frosting ate all of theirs. A quick and so easy scratch cake recipe.

    I made them for my son and he loved them. He's always asking when am I going to make them again! For my nephew's birthday I asked him what he wanted and it was to make the cajeta cupcakes. And my son and nephew are 17yrs old! They're great for any age group. Fun and easy to make. I'm teaching them both how ti make them today. Thanks FoodNetwork they're a hit in my family.

    I made two batches of cupcakes. The first time I followed the recipe exactly, and the cupcakes turned out somewhat bland. The second time, I added a teaspoon of orange zest and 1/4 teaspoon nutmeg, and they turned out better. My husband liked those better, too. With the nutmeg and the orange zest that I added, I felt that the dough was salty, so I added about 2 tablespoons sugar. I also added about 1/8 cup more milk because I liked my dough thinner - but that's just a matter of preference. The consistency of the original set of cupcakes was fine.

    I did not use the buttercream topping, I used the topping from the mango cake instead (http://www.foodnetwork.com/recipes/marcela-valladolid/mexican-mango-cake-recipe/index.html . The topping indeed was delicious. I would just recommend starting with one cup sugar, or even less, if your mangoes are sweet. Then, if you want to, you can add more sugar. My mangoes were fresh and very sweet, so the frosting turned out very sweet. Everybody else loved it like that, though. My husband even filled some of his cupcakes with the frosting instead of the cajeta! So, if you don't like cajeta or caramel, you can still enjoy these cupcakes without it.
