This recipe is fabulous! I have made it several times but altered it a bit for my own taste. I used canned corn as a cheat but still is so good and i add extra Cilantro and double the sour cream and mayo for extra creaminess. This one is a definite winner.

What an outstanding potato salad. My husband has declared this is a must have from now on anytime we do Mexican bbqs. I baked my potatoes instead of boiling them,added in some Mexican crema with the sour cream and mayo, doubled the cilantro and crumbled in some cotija cheese. I don't even like potato salad that much, but I couldn't stop eating this one. It is THAT good.

This is one of my all time favorite Summer dishes when you're wanting to cook burgers or hotdogs on the grill. One of the best things about this that I've found is if you use a charcoal grill, and use some wood chips to add smokey flavor, it's a good idea to grill the corn and the peppers on the grill. They will take in the smokey flavor and this potato salad will be super delicious.

I have been making this for my family for almost two years and they love it! Sometimes I add queso fresco as well. got in trouble one day when I made regular potatoe salad. My daughter even said she wants it on the menu at her quince. great recipe!

This is just wonderful potato salad. I don't want to stop eating it! It is great with any grilled meat, but I think it is best with beef.

I tried this last week because I was in the mood for potatoe salad and it is probably the best potatoe salad I've ever had! I could eat it again this week. I've told everyone I know about this recipe. Try it, you won't regret it!

This is my family's new favorite potato salad recipe. My wife won't eat anything else, it's absolutely awesome! Very easy too!
