wow! what a great alternative to the regular potato salad! brought it in for a potluck and it was a hit! I added a bit a cayenne pepper to give it a little bit more of a kick (I like mine spiiiccyyyy and it worked out well!

I made this for the first time for a Labor Day get together. It was an instant hit with everyone, even those who usually do not like potato salad!! I increased the amout of poblano peppers by two, and added some cayene pepper to the recipe because we like things a bit spicier. People were asking for the recipe all day long!!!! Awesome, awesome, awesome!!!

I had a family dinner at my house, and made a large batch of this potato salad. Everyone loved it, even picky eaters. I got several requests for the recipe!
The combination of flavors here is inspired! The mild spice of the poblanos, the cool sour cream and the sweet corn! It is delicious!
I used regular yukon gold potatoes, because I was making a large batch and the small, thin-skinned potatoes would have been too expensive. I just cleaned them, boiled them, and then peeled and sliced them after they cooked. It still turned out great!

I absolutely loved this salad. The corn in it is soooo good, I love that sweet pop of the corn with the spice of the poblano then the creaminess of the potato I use yukon golds. The only way to describe it is perfect. muy bueno!!!

ok so i followed the recipe exactly as written...and can i say it was the best potato salad ever! i did broil the peppers instead of cooking them on the stove top as i found that to be a bit easier. I loved the flavor as it tasted a bit smokey.
I am serving this tomorrow and i already know everyone will love it as much as i do. Thank you for sharing a wonderful recipe. I love your show!

OMG, this is the best I have had. I followed the recipe, except I doubled the recipe. This was a HIT. The flavors of the corn and the poblanos were SO OVER the top. The only think I might chance is doing some serano chili's and the poblonos. THIS IS THE BOMB!!!!!. Make it and you will be a hit!!!
