Everyone absolutely loved this potato salad. Next time I'll use more poblanos, depending on how spicy they are (some are more than others. Loved texture crunchy corn gives. I'll probably never make original potato salad again. This is wonderful for potlucks and picnics!

Just made this potatoe salad it is sooo good~ Its nice and creamy and the poblano chiles give it a nice kick to it~ I just had it with some carne asada very yummy
