I saw this recipe on the air not long ago. When I looked it up here on the site I too noticed the difference in measurements. A typical bag of sweetened coconut is 5 1/2 cups; a typical can of sweetened condensed milk is 14 oz. I used those mesurements and they came out wonderful. Also in order to make this more simple to eat, instead of baking in a casserole dish, I sprayed with cooking spray a mini tart pan and used that, (this yeilded approx 30 treats. This then produces individual sized portions all equal in size and its also nice that each piece has the chewy middle center and the browned crispy edge; perfect. Lastly, I made one batch authentic to the recipe and the other batch I added a half of a package of mini chocolate chips to the batter before putting in the pan. Both were great!

I tried the recipe as indicated in the show, but added about 1/4 c of raisins and topped it with a handful of chopped pecans! Was great! I used butter instead of non-stick cooking spray...Reminds me more of the Mexican candy! I will definately give this candy for upcoming parties!

Last year I bought her book, "Fresh Mexico", and this is one of my favorite desserts. In her book, the receipe calls for 5 1/2 cups sweetened shredded coconut (oen 14 oz package and 1/2 cup sweetened condensed milk. This comes out perfect every time!.

I made the recipe according to the show, not the posted recipe and it came out great. I also sprinkled the top with 1 cup chocolate chips for the last 3 minutes of baking and then spread them when I took it out of the oven. I'll be making these again and again.

I saw the discrepancy with the ingredients. Once I opened the bag of coconut and measured 4 cups there really was only a handful left. I just poured the whole bag and the whole can of condensed milk. It came out great. Very simple. Will make this again and again.

It is all about experimenting. I tried an entire 14oz bag (5 1/3 cups, of shredded coconut and one entire 14oz can of condensed milk. I greased a cookie sheet and dropped medium sized coconut balls utilizing a medium ice-cream scooper. I baked them as recommended. I can only say PERFECTION. Makes 18-20 cocadas.
Next time, I will use a mini muffin pan and bake them for 15 minutes.
