These are great! Love the combination of chorizo with the onions and potatoes. I've made them several times and they are always a hit.

SOOooo Good! Made this for my hubby for father's day. Add cajun seasoning, loaded up on butter-YUM!!! Put it in a casserole dish, top it off with sweet corn nibs, diced leftover ham, green onions and cheese. Definitely pop that dish in the oven for a savory melt! : two thumbs up, even our 10 mths. old ate it (threw it in the food processor!

This was so good! it is easy and i love the smokiness of the paprika in the chorizo with the somewhat salty potatoes (which i love potatoes. This is a great recipe if you are just trying out chorizo. I did not have onion on had so i used garlic instead, it works just fine and I love this dish.

Mexican Chorizo and potatoes, boiled or roasted are a great combination. I love the earthy taste of chorizo. One of my favs is to add a finely chopped jalapeno to the dish and add a couple of eggs at the end and scramble them in for a delicious breakfast hash. Or a fritata with the same ingredients topped with a couple of dollaps of sour cream, diced tomatoes, cilantro, and a few drops of your favorite hot sauce,

Very good, used to have this as a little girl made by the Mexican lady I babysat for. I made this with the rajas and beer marinated skirt steak which are both phenomenal!
