I am so glad that the Food Network is understanding that there is an audience out there for authentic Mexican cooking.

On a non-traditional note, I have made this dish with Soy Chorizo and no one can tell the difference. It is healthier and still flavorful. I am surprised by how much my very Mexican family is enjoying a spin on a classic dish.

I've made the sauteed potatoes w/chorizo quite a few times, I have made them for breakfast with scramble eggs alone and another time I made breakfast burritos by putting the potatoes and chorizo and scrambled eggs in a flour tortilla and sprinkled some jack cheese. I've also used this recipe to add to shrimp and chicken tacos...always delicious! Please keep the show going, Marcela is a wonderful teacher!

Look, Food Channel....Italian is OK. I like it. But what I really want is Honest to Goodness Mexican Cooking. You FINALLY have a show that reflects this....please keep up the good work.

what an easy recipe! i love chorizo and potatoes plus i also add some scrabbled eggs as well and had it with homemade tomatillo sauce my friend made for me. it was a delicious breakfast. i didn't add salt at all since the chorizo was already salty to my taste but i did add black pepper to spice it up more. i have tons of left over so i'll be having it for dinner as well but taco style :

I made a sightly different version since I didn't have all the ingredients, but either way my family loves it. I will be making this dish often!

Please, FOOD NETWORK directors bring Marcela back, or at lease let us know if she will come back in the future. I really enjoyed her show and tasty authentic Mexican recipes.
