Best enchiladas we've ever had!!.Doesn't even compare to the garbage they serve at restaurants. I didn't take all the seeds and veins out of the peppers because we love spicy. I made mine with chicken, will definitely make again and again.

These were pretty tasty. Loved the salsa. I've never cooked with guajillo peppers before, and although it ws a pain getting the seeds out, it was quite tasty. I'm going to try this salsa with beef enchiladas!
